We’ve had beets in our fridge for a while now (should you keep beets in the fridge?). Neither of us had any idea what to do with them. I sent Wolf a link which uses beets in chocolate cupcakes. He seems intrigued by the idea but hasn’t made them yet. Anyways, I was continuing to look around for beet recipes when I came across this recipe.
Wolf made it with local beets, carrots, and honey on a bed of bok choy. It came out tangy, sweet, and caramelized in some places. There’s a sweet gooeyness of this dish which is just delectable. It was a nice balance to the relative plainness of the stuffed peppers.
